This week I didn't have time to plan out a new recipe to try with our traveling to and from Indiana so I will share one of my favorite recipes with you instead! I hope you enjoy!
Chicken Divan Pie
Ingredients:
4 tbs of butter(separated)
2 tbs of flour
1 cup of chicken broth
8oz of sour cream
1/2 cup of milk
2 cups of shredded cheddar cheese(we like a lot of cheese so I usually add a 3rd cup!)
1 small package of frozen chopped broccoli or 2 cups of fresh chopped broccoli
2 lbs of boneless chicken breast, chopped into bite-size pieces
2 Deep Dish Pie Shells
2 Roll out Pie Crusts(for the pies top crust)
Directions:
Preheat oven to 375
If using frozen broccoli, I usually pull it out first and empty package into colander to thaw
In a large pan melt 2 tbs of butter and cook chicken through(add salt and pepper to taste)
Once chicken is completely cooked add it to the broccoli in the colander to help speed up the thawing process
Melt remaining 2 tbs of butter in large pan and whisk in flour
Once this mixture thickens, add chicken broth and sour cream, stir until it begins to thicken
Add milk and cheese to this mixture stirring until cheese is completely melted.
Stir in chicken and broccoli to the mixture and remove from heat
Pour this filling mixture evenly into the 2 deep dish pie shells then cover with the roll out crusts and cut slits to vent
Cover the pies with tin foil and cook at 375 for 30-45 minutes(depending on your oven)
Remove foil and cook for another 15 minutes or until the top crust is golden brown.
